The Palomino grapes are gently harvested by hand and carried in small boxes to avoid damages to the grapes. Then, they are softly pressed, folowed by fermentation at a controlled temperature of 24ºC/75ºF.
Once the wine achieves 11%-12% vol., wine spirit is added up to 17% vol.
The fortified wine is then transferred to 500 litre American oak casks, where ages through the unique system of Soleras, for 30 years average. This long aging time makes the wine complex and well balanced.
The special microclimate in El Puerto de Santa María, where our winery is located, allows this oxidative aging process to occur smoothly, imprinting its marvellous personality to the wine.

BLEND: A selection of the finest Palomino grapes (92%) from the best Pagos of the Sherry Triangle, with a tocuh a Pedro Ximenez(8%) to give complexity and a smoother and rounder mouth-feeling.
- Look: Lovely dark mahogany color with green highlights.
- Aromas & Flavours: Highly complex and aromatic, with notes of roasted coffee, hints of wax and cocoa. Medium dry, very expressive, mouthfilling and round, displays favours of walnuts spice and vanilla. Extremely long aftertaste.
Serve it slightly chilled. Perfect as and aperitif or after a good meal. Fantastic along side dessert or coffee.
